The month that was... October!

Happy November 1st everyone! November 1st, let's take a look at it's history...

It was a day when Shakespeare's tragedy 'Othello' was first presented (1604), a day when the first free school in NYC opens(1787) and a day First jet plane, Heinkel He 178, demonstrated to German Air Ministry (1939)

But that's looking back over November 1st. I want to reminisce on the month that was... October!
My October kicked off with a WIAW bang, quickly followed by some Thinking Out Loud (it was a link-up party over here for the beginning of October)
On the recipe front:
I made some vegan vanilla protein pancakes:
A caramel oat bran breakfast pudding:
  Rhubarb muesli cookies:
  A delicious Mexican wrap: 
 Chocolate pancakes:
And some awesome pink truffles!
I discussed a few heavy and important topics like unconscious sabotaging, the importance of exercise, sneaky food labels and the debilitating disease that is orange-itis :)
Lastly I brought the month to an end with a few budget meals for inspiration:
  And... that was October! Woah, I didn't realise I jam packed so much in- I thought this month positively flew by and I hardly did anything- this is why I love doing these posts!

Thinking out loud- The week that was... in my brain

Happy Thursday everyone! It's almost Friday. WHOOP WHOOP!
Now I've got a lot on my mind, which is why I'm ever so grateful for the awesome link-up hosted by Running with Spoons every Thursday for a weekly brain-dump (also known as Thinking out Loud ;)

Let's fly straight into it!
1. First of all I have a question for you. Are you an early bird or a night owl?
The reason I ask is because I am most definitely an early bird and most definitely NOT a night owl.
I am beginning to believe I am the weirdest teenager on the planet. Most definitely.
If there are any readers out there who are almost at the point of unconsciousness by 9:00pm and are full of beans by about 5:30am.. please leave a comment to let me know I'm not alone!

2. Have you guys ever heard of camel milk? (Haha, where did that question come from?) any way, I saw it in a healthy living magazine the other day and was surprised to learn that apparently it's the new moo juice! It's said to fight infection, promote healing and boost immunity! I didn't even know you could milk a camel and yet the magazine tells me that this stuff will hit select shelves in a couple of months. Camel milk on your cereal, hmm, I'll have to get used to that one!
 3. On the topic of strange foods, I think Vegemite would have to make that list. Now, I'm Australian so I love Vegemite and don't find it weird at all, but it seems like us Aussies are the only ones who do.
The reason this realisation is suddenly buzzing through my head was after I was flicking through channels one night and came across Beauty and the Geek Australia. They're Australian geeks and American beauties and one of the challenges for the beauties was to present on an Australian topic. Of course one of them got Vegemite and said something along the lines of 'This is like Australia's version to Nutella!' and followed this statement by taking a huge spoon of Vegemite.
Now guys, Vegemite is S.A.L.T.Y! You spread it thinly on bread, usually with butter. Never take a spoon of it on its own. Ever.
(By the way, that beauty spent the rest of her presentation coughing and spluttering saying; 'Why do you guys eat this?')

4. Generally if I'm low on time for dinner / lunch I'll have some toast with Vegemite and avocado. The other night I didn't have any bread, but I did have this lurking around in my freezer:

No, contrary to the box it is not a container of frozen cheese. It's a block of some pumpkin soup I made a few weeks ago. So, I plonked it in a saucepan, heated it up and voila- soup!

To pump it up I added some wholemeal pasta, peas and garlic tofu:
This was so quick to come together and really tasty!
5. I also knew ahead of time that I was going to be late home the other night, so in the morning I roasted up a heap of veggies, let them cool and then placed them in the fridge for that night, where I quickly scrambled up some eggs topped with salsa to go with them:
Does anyone else prefer cold roasted veggies to hot? I love them so much!
6. Ok, I'm back on the topic of milk... yeh... if I had to choose which milk I would drink it would have to be hippo.
Why?

7. And with that last little random piece of... whatever that was (I don't think I can call it information) I think I will wrap things up!

WAIW #29 A day of deliciousness!

Welcome Wednesday Party Goers!
Who's excited for the weekend? I am! Well, that being said I will probably be studying all weekend and then cleaning the pool (a girl's got to earn a living somehow) and then trying to rest up for the week ahead... but I'm still ready!
I'm also excited for this Wednesday on account of WIAW! Make sure to head on over to Peas and Crayons to have a sneaky peak at what everyone else has been nom-ing this fine day!

Shall we begin?

Breakfast:
I started the day with water and two pitted dates, before heading out for a glorious early morning run!
On my return I prepared my lunch to take to school and breakfast:
2 wholemeal crumpets with cashew butter and peanut butter, with a side of grapes and a green nudie juice.

Guys, I love crumpets. There is something about them that is different from eveery other bread-like product that I just adore. I'm thinking it's the bubbles:
This was a very good/ very sad last bite (sad because it was so good)

Snack:
Guess what! I mixed things up a bit today and took a container of corn for a morning snack instead of peas.. oooohhh!

I love corn.
Lunch:
Lunch was a quinoa, sauteed veggies (mushrooms, capsicum, eggplant and zucchini) with 2 boiled eggs. Completely random, but it was exactly what I wanted!


Snack:
For an absolutely awesome afternoon snack I had this plate of yumminess (I have expressed my love for fruit many times before, so I am going to do it again- I LOVE YOU NATURE'S CANDY!)

Enjoyed with a nice cold glass of soy milk:

Dinner:
Dinner was absolutely amazing as well! (It was a good day on the food front guys!) I made some mixed root veggie hash browns!
I also decided to just make it up on the spot... and they turned out really well!
I grated up half a parsnip, 1/4 cup sweet potato, 1/4 cup beetroot, 1/3 cup carrot and mixed that together in a bowl. Then I added about 1/4 cup chickpea flour, a teaspoon of minced garlic and a tablespoon of oil plus 2 tablespoons of water and mixed to combine:


Then I heated up a pan and took a handful of the mixture, squeezed it together in my hand, then flattened it in the pan, turning after a minute or so (once browned) and flipping again once browned on the other side:

I just placed them in an oven at 180 degrees celsius for 15 minutes to cook through, while I steamed some broccoli and brussels sprouts and then peas and made a pesto salad thing with some mixed four beans:
But seriously- those hash browns were awesome!
Super yummy dinner!
To finish of my day, I walked up the stairs, looked out the window and saw the last of a magnificent sunset.
Perfect.

Colourful meals all round!

Hey guys! I thought I'd start off today's post with a budget meal!
 You have probably seen this lunch of mine before (it is one of my favourites) and it has definitely started making a come back (I've had it almost every weekend for the past month)! Then I realised it's dead easy and cheap and uses up any leftover veggies you have lying around... seriously you can throw anything into this dish:
It's one of my big veggie-filled, stir-fry, scrambled egg-y, concoctions!
Into my frypan with some olive oil and garlic went some grated carrot, grated brussels sprouts, grated zucchini, chopped capsicum, (red and green) chopped mushrooms, chopped cherry tomatoes, chopped semi-dried tomatoes, sliced brocoli, frozen peas and corn, lentils, spinach and... that's it! On high heat for a few mins and you get a big bowl of yummy!

 To add some protein boost and yummy flavour I simply whisked up an egg with some water and sea salt flakes:
 Placed in the exact same pan:
 And slowly pushed the eggs around until scrambled:



 Mixed into my veggies:
 Topped with salsa (not optional!!!) and devoured!
 The reason why it's considered a budget meal is you really don't have to go out and buy anything. You can pretty much throw any sort of veggie lying around into this dish and use up any less-than-fresh produce in the process!
 Filling, cheap, extremely healthy (lots of serves of veg!) and extremely delicious!

And just because I'm in the mood for bright colourful meals..
How about a papaya stuffed with overnight oats with a side of peanut butter +frozen banana soft serve for breakfast? Oh yes.
I got this bad boy:
Stuffed him with this bad boy:
3/4 cup of muesli mixed with 1 cup almond milk and sprinkle of chia seeds, left in fridge overnight.
And whazzed up some greek yoghurt with 1/2 frozen banana and a spoonful of crunchy PB!
Delicious!

Then I ate these bad boys!
 Perfect bowl for my oats!

 This tasted like a peanut butter cheesecake:
 And then a peanut butter cheesecake with papaya!
Nom

Are you a fan of stir fry's?
Do you like papaya? It smells a bit funky and has a strange taste at first, but over all I like it!
